In a pot, heat the sunflower oil on high and fry the chopped onions and some crushed garlic until they become translucent. Keep stirring so they don’t burn.
Add the minced meat, black pepper, Arabic mixed spice, and some salt. Fry until the meat becomes brown. Keep moving the meat around and separate it into pieces. You will notice the meat releases water - don’t let it all evaporate.
Lower the heat to medium and start adding the spinach. Add a few handfuls at a time and stir until the spinach wilts. Repeat until you’ve added all the spinach.
Add the water (hot) and the remaining salt and let boil for 2 to 3 minutes. Then add the chopped coriander and remaining garlic and boil for another 2 to 3 minutes. Do not cover. Leave a bit of coriander on the side for garnish.
