A chunky pear cake is a cake made with chunks of pear in the batter. The cake is usually moist and dense, and the pear chunks add a sweetness and texture to the cake.
FROSTING:1/3 cbutter1 1/2 ts vanilla extract3 oz cream cheese2 1/2 cpowdered sugar In a large bowl, blend together sugar, oil, baking powder, bakingsoda, cinnamon, ginger, salt and flour.
Beat at medium speed for 5minutes.
Add eggs, one at a time, beating well after each addition.
Core pears, and cut them into half-inch chunks.
Stir pear chunks intobatter.
Pour batter into unoiled 9 x 13-inch glass pan.
Bake at 350degrees for one hour or until done.
Cool before frosting.
For frosting, beat together butter, cream cheese and vanilla untilsmooth.
Beat in powdered sugar.
Frost the cooled pear cake, andserve when ready.
