Corn Bread 2 Recipe

There is no one definitive answer to this question, as there are many different ways to make corn bread. Some recipes call for using cornmeal, while others use flour, and still others use a combination of the two. Some recipes add sugar, while others do not. And some recipes add eggs, while others do not. So, there is no one right answer to this question.

 1 c Cornmeal, yellow
 1 x or:
 1 c Cornmeal, white
 4 tb Sugar
 1 ts Salt
 1 ea Egg, well beaten
 1 c Milk, skim
 1 c Flour
 4 ts Baking powder
 2 tb Butter, melted

Add the sugar and salt to the cornmeal.

Beat the egg well and pour into themilk; stir this mixture into the meal, beating thoroughly.

Sift the flourand baking powder into the meal, add the melted butter and beat hard.

Pourthe mixture into a greased pan and bake at 400-F until brown.

To make athin crisp Johnny Cake, use an oblong pan and spread batter thinly.

For asoft loaf, spread batter thickly.
