Creole Shrimp Stew Recipe

Creole shrimp stew is a beautiful blending of two styles of cooking that come together easily and deliciously, comes together in 30 minutes.

 3 tablespoons achiote oil
 ¼ cup sofrito
 3 bay leaves
 ½ cup alcaparrado
 3 ounces cubed ham
 1 can whole peeled tomatoes, drained and chopped(16-ounce)
 1 cup tomato sauce
 2 pounds medium shrimp, peeled and deveined
 Salt
 Pepper

Heat achiote oil in a large pot over medium heat. Add the sofrito, bay leaves, alcaparrado, and ham, and sauté for 2 to 3 minutes. Set aside.

Drain the whole tomatoes and roughly chop them. Add the tomato sauce and chopped tomatoes to the same pot and return to heat, bringing to a boil.

Reduce the heat to medium and add the shrimp, cooking for about 5 minutes until they become pink and opaque. Add salt and pepper to taste, cook for a couple of minutes to meld the avors, then serve.
