Egyptian Lemon Chicken Recipe

?Egyptian lemon chicken is a dish made with chicken, lemon juice, and spices. The chicken is usually marinated in the lemon juice and spices before being cooked.

 2 small chickens, cut into serving size pieces
 4 tablespoons olive oil
 rind and juice of 1 lemon
 1 minced garlic clove
 ½ teaspoon thyme
  salt
  pepper
  butter
 2 tablespoons finely chopped parsley

Place chicken in shallow bowl. Sprinkle with olive oil, garlic, lemon rind, lemon juice, thyme, salt and pepper. Marinate for at lest 2 hours, turning occasionally. Place chicken and marinade in buttered baking dish. Bake at 350 degrees for 1 hour or until tender, basting frequently. Remove from oven and sprinkle with parsley. Serve immediately.
