Jicama-Melon Salsa is a refreshing, sweet and tangy salsa made with jicama, honeydew melon, lime juice, and mint. It is the perfect accompaniment to grilled chicken or fish.
In a food processor or blender, puree lime juice, mango and chile.
Placediced vegetables and fruit in a mixing bowl, add puree and combine.
Mix incilantro, salt and pepper.
Adjust seasonings to taste.
Gently fold in sourcream.
Serve with grilled fish or chicken.
