?Karen's Gulrotkake RecipeIngredients:1/2 cup (1 stick) butter, softened1/2 cup sugar2 eggs1/2 cup all-purpose flour1 teaspoon baking powder1/4 teaspoon salt2 cups grated carrots1 cup chopped nuts (optional)1/2 cup raisins (optional)Directions:1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch baking dish.2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the flour, baking powder, and salt. Fold in the carrots, nuts, and raisins. Spread the batter into the prepared dish.3. Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.

 2 kopper sukker
 2 kopper hvetemel
 2 ts bakepulver
 1 ts natron
 1 ts salt
 2 ts kanel
 ½ ts vaniljesukker
 4 egg
 3 kopper revne gulrøtter
 ½ kopp rosiner
 125 g Tine gourmetost naturell
 2 ss mykt smør
 1 ts vaniljesukker
 3 dl melis

Pisk soyaolje og sukker sammen.

Bland eggene i, ett om gangen, vekselvis med det tørre. Tilsett til slutt gulrøtter og rosiner.

Stekes ved 150-170 grader i 1 til 1 1/2 time på nederste rille.

Alt røres sammen til en glatt glasur som smøres over den avkjølte kaken.
