Lebanon County Peach Cake Recipe

There is no one definitive recipe for Lebanon County Peach Cake. However, many recipes for this type of cake call for using fresh peaches, as well as peach preserves or peach pie filling. Other ingredients that are typically used in these cakes include all-purpose flour, baking powder, salt, butter, sugar, eggs, and vanilla extract.

 ¼ c Shortening
 1 ea Egg
 2 tb Sugar
 2 c Flour
 3 ts Baking powder
 ½ ts Salt
 1 c Milk
 1 x topping:
 1 x Sugar
 ¼ ts Cinnamon
 1 x Peaches, fresh

Sift and mix together the dry ingredients (except the topping ingredients);cut in the shortening and add the egg and milk which have been mixedtogether.

Mix thoroughly.

Pour into a well-greased oblong pan and coverwith peeled peach halves.

Sprinkle with sugar and cinnamon and bake at350-F about 35 minutes.
