Lemon Butter Recipe

Lemon butter is a smooth, creamy sauce made from butter and lemon juice. It is used as a condiment or spread on toast, bagels, or pancakes.

 2 c Sugar
 ½ c Butter
 3 ea Egg, well beaten
 ½ c Water
 3 ea Lemon, juice of
 3 ea Lemon, grated rind of

Cream the butter and sugar thoroughly; add the eggs and mix well.

Add thewater and lemon juice and rind.

Cook in top of double boiler until thick.
