October Cake Recipe

There is no one specific October cake recipe. However, some popular flavors for October cakes include pumpkin, apple, and spice.

 2 1/4 c unbleached flour
 2 ea eggs
 2 ts baking powder
 1 1/2 c yams, chopped, drained
 2 ts baking soda
 2 c chopped tart green apples
 ¼ ts allspice
 ½ c walnuts, chopped
 ¼ ts nutmeg
 ½ c raisins (optional)
  c pure maple syrup
 2 tb cream
 ½ c butter, softened
 2 tb orange marmalade

Preheat oven to 350 degrees.

Sift together flour, baking powder, bakingsoda, allspice and nutmeg.

Set aside.

In separate bowl, combine maplesyrup, butter and eggs, and beat with electric mixer for 3 minutes.

Byhand, stir in yams, apples, walnuts, raisins, cream and marmalade.

Add flour mixture a little at a time, stirring well after each addition;batter will be stiff.

Pour into lightly oiled 9 x 5-inch loaf pans.

Bakeat 350 degrees 60-70 minutes.

Let cake cool 10 minutes, then turn ontocooling rack.

Let cool completely before slicing.
