Ingredients:1 lb. jicama, peeled and diced1/2 cup fresh orange juice2 tablespoons olive oil1 tablespoon lime juice1/4 teaspoon salt1/4 teaspoon pepper1/2 cup chopped fresh cilantroDirections:1. In a large bowl, combine jicama, orange juice, olive oil, lime juice, salt and pepper.2. Stir in cilantro.3. Serve at room temperature or chilled.

 2 Avocados, sliced
 1 sm Jicama, halved

DRESSING:
  c Vegetable oil
 1 ts Grated orange peel
 ¼ c Orange juice
 2 tb Sugar
 2 tb Lemon juice
 ½ ts Dry mustard
 ¼ ts Salt

Arrange oranges, avocados and jicama (cut into julienne strips) on salad greens on 6 salad plates. Serve with Orange Dressing.
