Sprinkle the onions with a little bit of salt and black pepper. Mix well then squeeze with your hands (this crushes the onions and removes any excess water).
Add the bulgur and lemon juice to the onions and let sit for 20 minutes. To save time, we recommend chopping the parsley once you’ve put aside the bulgur mixture.
Put the chopped parsley in a large bowl and add the bulgur mixture and the remaining ingredients: Chopped and dried mint, olive oil, tomato, salt (minus what you added to the onions in step 1) and black pepper. Mix well. Leave a bit of the chopped tomato on the side for garnish.
