Broiled Mackerel With Mustard Sauce Recipe

Ingredients:1 pound mackerel fillets1/4 cup Dijon mustard1/4 cup mayonnaise1 tablespoon lemon juice1 tablespoon chopped fresh parsley1 teaspoon chopped fresh thyme1/4 teaspoon salt1/4 teaspoon ground black pepper1 tablespoon butter1 tablespoon olive oilLemon wedges (optional)Directions:1. Preheat broiler.2. Combine mustard, mayonnaise, lemon juice, parsley, thyme, salt, and pepper in a small bowl.3. Place mackerel fillets on a broiler pan coated with cooking spray; spread mustard mixture over fillets.4. Dot with butter and olive oil.5. Broil for 4 minutes or until fish flakes easily when tested with a fork.6. Garnish with lemon wedges, if desired.

Wash the fish quickly in cold water and place on a greased broiler rack. Combine the remaining ingredients and brush on fish. Broil under medium heat for 8-12 minutes, brushing with sauce several times during the broiling.
