Ingredients:1 cup all-purpose flour1 tablespoon sugar1 teaspoon baking powder1/2 teaspoon baking soda1/4 teaspoon salt1 cup egg beaters1 cup buttermilk2 tablespoons butter, melted1 teaspoon vanilla extractcooking sprayInstructions:1. Combine flour, sugar, baking powder, baking soda, and salt in a bowl, stirring with a whisk.2. Add egg beaters, buttermilk, butter, and vanilla extract; stir until well blended.3. Heat a griddle or large nonstick skillet over medium heat. Coat pan with cooking spray. Pour 1/4 cup batter per pancake onto griddle. Cook for 2 minutes or until bottoms are lightly browned. Turn pancakes over; cook for 2 minutes or until bottoms are lightly browned. Repeat procedure with remaining batter.

Add to egg mix; add melted butter; mix well.
Drop by spoonfuls onto lightly greased griddle and brown on both sides,cooking until done (griddle should be medium high heat).
Hint:: To make buttermilk; Add 1 tablespoon lemon juice (REALEMON BRAND)per cup of milk.
