Cocoanut custard pie is a type of custard pie that uses cocoanut milk instead of cow's milk. The resulting pie is richer and more flavorful than a traditional custard pie.
To the beaten egg yolks, add the sugar and milk, and cook all together.
Addthe flour which has been mixed with a little cold water and cook untilmixture thickens.
Add vanilla and let mixture cool.
Mix half of thecocoanut with the custard filling and pour into baked pie shells.
Beat thewhites of eggs until stiff and frothy, add 3 Tbsp sugar and spread on topof pies, sprinkle with remaining cocoanut.
Brown in 325-F oven about 10minutes.
This recipe will make 2 medium pies.
