Creole sauce is a spicy, tomato-based sauce that is popular in Louisiana cuisine. It is typically made with tomatoes, onions, celery, bell peppers, garlic, and a variety of spices.

 1 tb Vegetable oil
 28 1/2 oz Stewed tomatoes
 1 lg Onion, chopped
 ¼ c Dry red wine
 2 lg Ribs, celery, chopped
 ½ ts Each, thyme, oregano, basil
 ½ c Chopped green peppers
  ts Each, pepper, red
 2 Cloves, garlic, crushed

In a sauce pan, over medium high heat, heat oil: add onion, celery, greenpepper, and garlic.

Cook about 6 minutes.

Stir frequently.

Add stewedtomatoes, wine, tomato paste and seasonings.

Bring to a boil.

Reduce heatto low and simmer for 30 minutes, uncovered.

Stir occassionally.

Cook untlthickened.
