Egg croquettes are a type of egg-based dish that is typically made by mashing boiled eggs and then combining them with bread crumbs, cheese, and other ingredients before shaping them into small patties or balls. They can be fried, baked, or even served cold.

 4 ea Egg, hard boiled, chopped
 1 tb Butter
 1 tb Flour
 ¾ c Milk
 ½ ts Salt
 1 ds Paprika
 1 x Cracker crumbs
 1 ea Egg, beaten
 1 x Oil

Melt the butter in a double boiler, add flour and stir until blended.

Addmilk and seasonings and cook until mixture is thick.

Remove from fire andadd the hard cooked eggs.

Set aside to cool.

When cold, shape intocroquettes; roll in cracker crumbs and egg, and fry in deep hot oil.
