There are a lot of different recipes for freezer tomato sauce, but they all have the same basic ingredients: tomatoes, garlic, olive oil, and herbs. Some recipes also include onions, carrots, or celery.
In a large saucepan, over medium heat, saute chopped onion in oil untiltender.
Stir in tomatoes and parsley.
Cook over medium heat, covered for30 minutes.
Simmer uncovered, until mixture is desired consistency, about20 minutes, stirring occasionally.
Stir in sugar; season to taste withsalt and pepper.
Cool to room temperature.
Store in two ziploc freezerstorage bags.
Makes about 2 quarts sauce.
