A fried pie is a pie that has been fried in oil or fat. This gives the crust a crispy texture and the filling a gooey consistency. Fried pies are typically made with fruit fillings, but can also be made with chocolate, cream, or savory fillings.
Sift the flour and salt together, cut in the shortening and mix with hands.
Add water.
Roll out about 1/8 inch thick on a floured board.
Cut with alarge cookie cutter about 4 inches in diameter.
In each round, place 1 1/2Tbsp sweetened mashed fruit (dried apricots, peaches, prunes or thick applesauce).
Moisten edges with cold water, fold to make semi-circle and pressedges together with a fork.
Fry in deep fat.
