 2 Ribs of celery, chopped
 1 tb Olive oil
 1 Yellow onion, chopped
 1 Bay leaf
 1 Clove garlic, minced
 1 c Uncooked long grain rice
 1 ts Dried thyme
 sprig for garnish

In a medium sauce pan, saute onion, celery, garlic and thyme, in oil for 5minutes or until onions are translucent.

Add bay leaf and 2 1/2 cupswater, bring to a boil, add rice.

Cover and simmer for 20 minutes or untilall water is absorbed and rice is tender.

Remove bay leaf.

Spoon intoserving bowl.

Garnish with thyme sprig.
