Light As A Feather Cake Recipe

There are a few different recipes for light as a feather cake, but they all generally involve a cake that is very light and fluffy. There are variations that use different types of flour, but the most common recipe uses a combination of self-rising flour and cake flour. This combination creates a cake that is both light and moist.

 ½ c Shortening
 ½ ts Salt
 ½ c Boiling water
 ½ c Baking powder
 ½ c Brown sugar
 ½ ts Baking soda
 ½ c Molasses
 ¾ ts Cinnamon
 1 Egg, beaten
 ¾ ts Ginger
 1 1/2 c Flour

Put shortening in a bowl and pour in boiling water.

Add sugar, molassesand egg.

Stir the flour, baking powder, baking soda and spices together.

Add to shortening mixture and beat until mixed well.

Batter will be thin.

Pour into greased 8 inch pan.

Bake at 350 deg f for 30 to 35 minutes.
