Ingredients:1 lb. ground beef1 small onion, diced1 (15 oz) can black beans, rinsed and drained1 (14.5 oz) can diced tomatoes, undrained1 (10 oz) can red enchilada sauce1 (4 oz can diced green chilies, undrained)6 (6-inch) corn tortillas1 1/2 cups shredded cheddar cheeseDirections:Preheat oven to 350 degrees F.In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain fat.Stir in black beans, tomatoes, enchilada sauce, and green chilies.Place 3 tortillas in the bottom of a 9x13 inch baking dish.Top with half of the beef mixture and 1/2 cup of cheese.Repeat layers of tortillas, beef mixture, and cheese.Bake for 25 minutes or until cheese is melted and bubbly.

Pour into a 2 inch deep by 8-inch round or square baking disk. Bake in 400 F oven for 10-15 minutes. Top with cheese, bake a little longer if desired.
