Old fashioned bread stuffing is a traditional recipe that is typically made with bread crumbs, onions, celery, and spices. The bread is usually soaked in chicken or turkey stock before being baked in the oven.
In a small sauce pan cook celery and onion, in butter, until tender butnot brown.
Remove from heat.
Stir in poultry seasoning, 1/4 ts pepper, and1/8 ts salt.
Place dry bread cubes in a bowl.
Add onion and celery mix.
Pour in enough broth or water to moisten, tossing lightly.
Use to stuffone 8 to 10 lb.

MICROWAVE DIRECTIONS: Micro cook onions and celery in a one quart cassroledish with butter for 6 to 8 minutes on high.
Continue as above.
HERB AND ONION STUFFING: Prepare as above but add 1 cup more onions andleave out the celery.
Use sage and add 1/4 cup snipped parsley, 1/2 tsdried thyme, and 1/4 ts marjoram.
