Ingredients:4 pigs' feet1 onion, sliced1 carrot, sliced1 celery stalk, sliced1/2 cup white vinegar1/2 cup water1 tablespoon salt1 tablespoon sugar1 teaspoon peppercorns1 bay leafDirections:1. Place pigs' feet in a large pot and cover with water. Bring to a boil and simmer for 1 hour.2. Remove pigs' feet from water and let cool.3. In a large jar or container, place pigs' feet, onion, carrot, celery, white vinegar, water, salt, sugar, peppercorns, and bay leaf.4. Refrigerate for at least 24 hours before serving.
Split the pigs' feet, scrub thoroughly and cover with cold water.
Add thevinegar and bring to a boil.
Skim off the top.
Add seasonings and boilslowly for 2 hours.
Cool in liquid and serve cold.
