1/2 cup shortening1 cup all-purpose flour1/4 teaspoon salt2 tablespoons cold waterIn a medium bowl, combine the shortening, flour, and salt. Using a pastry blender or your fingers, cut or rub the shortening into the flour until the mixture resembles coarse crumbs. Add the cold water, 1 tablespoon at a time, and mix until the dough comes together.Wrap the dough in plastic wrap and refrigerate for at least 30 minutes before using.

Roll outand fit in pit pan.

Don't stretch pastry when fitting into pan, as thiswill cause shrinkage in finished product.
