Pie Crust Recipe

There are many recipes for pie crust, but a basic one is:1 cup all-purpose flour1/2 cup cold butter1/4 cup sugar1/2 teaspoon salt1/4 cup cold waterIn a medium bowl, combine flour, sugar and salt. Cut in butter until it resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.On a lightly floured surface, roll dough to a 1/8-in.-thick circle. Transfer to a 9-in. pie plate. Trim even with rim. Crimp edge as desired.

Add water orjuice and quickly cut together.

Turn out on floured board and gentlyknead 1-2 minutes.

Separate dough into two halves, and roll each out witha flowered rolling pin.

Place one half into pie plate, add filling andcover with other half of dough.

Cut holes with fork in center and trimedges.

This crust can be used to make Tofu Quiche if fillo dough isunavailable in your area.

Makes enough for 1 double crust.
