Polvo Frito – Fried Octopus Recipe

?Polvo Frito is a dish made of fried octopus. It is a popular dish in Portugal and Spain, and can be served as an appetizer or main course. This dish is typically made with baby octopus, but larger octopus can also be used. The octopus is first boiled until tender, then it is dredged in flour and egg, and finally fried in hot oil.

Precook 1 kg of octopus, drain and cool Cut it up into generous chunks. Beat 3 eggs, with a little milk salt and pepper to taste, and half a bunch of very finely chopped parsley. Coat the octopus pieces in the egg mixture and shallow fry in a little olive oil, turning them until are golden
