Potato Sponge Bread Recipe

There is no one definitive recipe for potato sponge bread. However, many recipes for this bread call for potatoes to be boiled and mashed before being added to the bread dough. Other common ingredients in potato sponge bread recipes include flour, sugar, yeast, salt, and butter.

 2 tb Sugar
 1 tb Salt
 1 c Yeast
 1 x dissolved in:
 ½ c Water, lukewarm
 4 c Flour, bread

Pare and boil the potatoes and while hot, mash finely and rub through asieve or colander.

Add the sugar, salt and dissolved yeast cake.

Stir flourinto the mixture, beating well.

Add more flour to form soft dough.

Turnonto a floured board and knead.

Return to bowl, cover and let rise overnight.

In the morning, form into loaves, let rise until light and bake at350-F for 45 to 50 minutes.
