Rigatoni alla fontina is a pasta dish made with rigatoni pasta, fontina cheese, and butter. It is a simple dish that is perfect for a weeknight meal.
eheat oven to 400 degrees.
Cookthe rigatoni in 5 to 6 quarts saltedboiling water until extraal dante (they will finish cooking in the oven).
Drain well and place in a large bowl.
Add2/3 of the butter, 1/2 of theparmigiano,and nutmeg and mix well until all the pasta is coated.
In abuttered baking dish, make a layer ofthepasta,a layer of the fontinacheese,sprinklewiththe parmigiano,and repeat the process until thepasta is usedup,ending with a layer of the fontina on top.
Sprinklewith parmigiano and black pepper and dot with the remaining butter.
Bakefor 15 minutes, or until the cheese is melted.
