This smooth tomato sauce is made with Italian tomatoes that have been peeled and seeded. The sauce is simmered with onion, garlic, and herbs, and then pureed to create a smooth texture.
If using plum tomatoes, cut in half.
If using large tomatoes, cut inquarters.
Place tomatoes in a non-reactive saucepan.
Cover and cook for 15to 20 minutes or until soft.
Once soft, pass tomatoes through food milland reserve puree in a bowl.
Pour olive oil into a medium skillet and setover medium heat.
Add onion and garlic and saute for 2 to 3 minutes oruntil golden.
Add tomato puree, sugar and basil.
Season with salt andpepper to taste.
Cook until sauce is reduced and thickened to yourpersonal liking, about 5 to 10 minutes.
Makes about 2 to 3 cups.
