Shoo-Fly Cake (Old Lehigh County Recipe) is a cake made with molasses and spices, and often served with a coffee or tea. It is a traditional cake of the Lehigh County region in Pennsylvania.
1 1/2 c Flour
1 c Brown sugar
¼ c Lard
1 x or:
¼ c Butter
½ c Molasses
½ c Water, hot
½ ts Soda
1 x pastry

Make crumbs by combining the flour, sugar and shortening.

Line a pie panwith pastry.

Dissolve the soda in the hot water and combine with themolasses.

Pour into the pastry-lined pan, top with the crumbs and bake at350-F until firm.
