Ingredients:1 lb. spinach1 lb. potatoes1 onion4 cups vegetable brothSalt and pepper to tasteInstructions:1. Wash and chop the spinach and potatoes.2. Peel and chop the onion.3. In a large pot, bring the vegetable broth to a boil.4. Add the chopped spinach, potatoes and onion.5. Season with salt and pepper to taste.6. Simmer for 15-20 minutes or until the vegetables are tender.7. Serve hot with some crusty bread.
Or you can use 1/2 t Dried Thyme Leaves, crumbled.

Chorizo sausage links should becooked and sliced.
~Cook and stir bacon in 3-quart saucepan until crisp.
Remove bacon withslotted spoon and drain; reserve fat in saucepan.
Cook and stir onion infat until tender.
Stir in broth, potatoes, carrot, celery, wine, salt,thyme, sage and pepper.
Heat until boiling; reduce heat.
Cover and simmerfor 30 minutes.
Stir in half of the spinach and cook for 2 minutes.
Stirin remaining spinach; cover and cook until spinach is just wilted, about 2minutes.
Stir in milk, parsley and bacon; heat just until hot.
Serve withsausage.
