Stir-frying is a quick and easy way to cook vegetables. This recipe features zucchini, carrots, and leeks. The vegetables are cooked in a hot pan with a little oil until they are tender. Serve this dish as a side or as a main course.
SEASONINGS1/2 ts Salt1/4 ts 5-spice powder1/2 ts Sugar Preparation:Wash vegetables.
Trim zucchini and slice into 2 longmatchsticks.
Peel carrots and cut into 2 long matchsticks.
Trim leeksand do likewise.
Peel garlic and cut into thin slices.
Stir-frying: Heatpeanut oil in hot wok until it starts to smoke.
Stir-fry garlic and gingerfor 30 seconds, splashing with water to prevent burning.
Add carrots andstir-fry for another 30 seconds.
Add leeks; stir-fry for 1 minute.
Addzucchini; stir-fry for another 30 seconds.
Sprinkle with seasonings,tossing ingredients as you do.
When vegetables are cooked, sprinkle withsesame oil.
Transfer to serving platter or individual plates to serve.
