Sweet Potato Rolls Recipe

 1 lg Sweet potato, 3/4 lbs.
 ¼ c Sugar
 4 tb Butter
 2 ts Salt
 1 pk Yeast
 2 Eggs
 ½ c Milk
 4 1/2 c Flour, adust as needed

Cut sweet potato in chunks.

Put in pot with boiling, salted water.

Cookuntil tender, about 15 minutes.

Drain and peel sweet potato.

Mash untilsmooth.

Melt butter.

Let potato and butter cool.

Dissolve yeast in 3 tbs.

Combine milk, one cup sweet potato, butter, sugar, salt andyeast.

Gradually add in 3 1/2 cups flour.
