Zucchini Cake Recipe

Zucchini cake is a cake made with zucchini as one of the main ingredients. It is often flavored with cinnamon, nutmeg, and vanilla. The zucchini can be grated or shredded and added to the batter before baking. Zucchini cake is often served with cream cheese frosting or a simple glaze.

 3 c Flour
 ½ ts Salt
 2 ts Baking powder
 1 c Applesauce
 1 ts Baking soda
 1 c Dark brown sugar
 2 ts Cinnamon
 3 Egg whites
 1 ts Nutmeg
 2 c Shredded zucchini
 ½ ts Ground cloves
 ½ c Cut up dates

Preheat oven to 350 degf.

Spray bundt pan with non stick spray.

Combineflour, baking powder

Beattogether applesauce, sugars and egg whites.

Blend together applesauce mixand dry mix in mixer, at medium speed, only until smooth.

Stir inzucchini.

Pour batter into prepared pan.

Bake for 45 to 50 minutes oruntil knife inserted in middle comes out clean.

Remove from pan and coolon wire rack.

Serves 20 - each serving = 165 calories; .
