Zucchini Parmesan Recipe

Zucchini Parmesan is a dish made with breaded and fried zucchini slices that are then baked with a layer of tomato sauce and mozzarella cheese.

 ½ c Cheese, grated
 ¼ ts Pepper
 8 Zucchini, sliced, medium
 ¼ ts Oregano
  c Onion, chopped
 ¼ ts Rosemary
 2 tb Parsley, chopped
 4 c Tomato, peeled
 1 Garlic, clove, large
 ¼ c Olive oil
 1 tb Salt

Heat oil in large skillet.

Add zucchini, onion, parsley, garlic, salt,pepper, oregano and rosemary.

Saute' mixture over medium heat, stirringoften, until zucchini is tender (20 minutes).

Toss in chopped tomatoes andcontinue to saute' until tomatoes are thoroughly heated (5 minutes).

Turnmixture into a serving dish; Sprinkle with parmesan cheese.
