Boiled Crawfish -- Justin Wilson Recipe1 (3-pound) crawfish1/2 cup salt1/4 cup cayenne pepper1/4 cup black pepper1/4 cup garlic powder1/4 cup onion powder1/4 cup paprika1/4 cup dried oregano1/4 cup dried thyme1 gallon water2 (12-ounce) cans beer4 lemons, halved4 bay leavesIn a large pot, combine the crawfish, salt, cayenne pepper, black pepper, garlic powder, onion powder, paprika, oregano, thyme, water, beer, lemons, and bay leaves. Bring to a boil over high heat and cook for 3 minutes. Reduce the heat to medium-low and simmer for 5 minutes. Remove from the heat and let sit for 10 minutes. Serve with boiled potatoes and corn on the cob.

Bring seasonings to boil for 10 minutes.

Add potatoes, corn,and smoked sausage.

Boil for another 10 minutes.

Add crawfish.

Bring back to boil.

Cut fire off immediately.

Let soak for20 to 30 minutes.

Drain.

Peel and eat.

While water is coming to a boil, cull and clean crawfish.

Rinse well with garden hose and remove any dead ones.

Always wear gloves when you fool with crawfish, but remember,they can still pinch you through gloves.
