Braised Celery (Irish) Recipe

Braising is a method of cooking in which food is first browned in fat, then cooked slowly in a covered pan in a small amount of liquid. Braised celery is a traditional Irish dish in which celery is braised in butter and chicken stock.

 1 ea Head celery
 10 fl Stock
 1 ea Medium onion
 1 x Salt/pepper to taste
 1 ts Chopped parsley
 1 oz Butter
 2 ea Slices bacon

Clean celery, cut into one-inch pieces and place in a casserole dish.

Finely chop bacon and onion and sprinkle over celery along with choppedparsley.

Pour on stock.

Dot with knobs of butter.

Cover dish and bakein a moderate oven for 30-45 minutes.
