Giant Jack-O’-Lantern Cake Recipe

There is no one definitive recipe for a giant jack-o'-lantern cake. However, most recipes for this type of cake call for a yellow or white cake mix, pumpkin puree, and some type of orange frosting. Some recipes also include spices such as cinnamon, nutmeg, and cloves.

 4 c Flour
 1 1/3 c Oil
 1 c Sugar
 4 ts Vanilla
 4 ts Pumkin pie spice
 30 oz Can pumkin pie mix
 3 ts Baking powder
 2 c Chopped walnuts
 1 1/2 ts Baking soda
 32 oz Cream cheese frosting
 6 ea Eggs
 1 ea Banana, unpeeled

Preheat oven to 325 deg f.

Grease and flour a 10 bundt pan.

In a large bowl, mix together 2 cups flour, 1/2 cup sugar, 2 tsp spice, 11/2 tsp baking soda and 3/4 tsp baking powder.

In a small bowl, mix 3eggs, 2/3 cup oil and 2 tsp vanilla.

Stir egg mixture, 1 1/2 cups pumkinpie mix and flour mix together.

Add 1 cup walnuts.

Mix batter well.

Pourinto prepared pan.

Bake for 50 minutes.

Cool ten minutes in pan, removeand cool completely.

Repeat for second cake.

Tint 1/3 cup of frosting for stem.

Tint remaining frosting orange.

Cut 1/2 inch from top of each cake ( not the fluted side).

Place 1 cakeflute side down on a platter.

Spread cut side with frosting and placesecond cake, flute side up, on top top.

Place a foil covered cardboarddisk in top of cake to fill hole.
