 1 tablespoon olive oil or vegetable oil
 3 tablespoons lemon juice
 1 small onion, finely chopped
 1 clove garlic, minced
 2 bay leaves
 2 teaspoons oregano leaves
 ½ teaspoon black pepper
 2 pounds lean boneless lamb, fat removed, cut in 1 1/2 inch cubes
 1 large mild red onion, cut into 1 1/2 inch pieces
 1 large green or red bell pepper, seeded and cut in 1 1/2 inch squares
 ½ pound medium mushroo

Combine oil, lemon juice, chopped onion, garlic, bay leaves, oregano and black pepper. Add lamb; stir to coat. Cover and refrigerate for at least 4 hours, stirring several times. Remove meat, reserving marinade. Thread meat, red onion, bell pepper and mushrooms on skewers. Preheat broiler; place shish kebabs on rack in pan, about 3 inches from heat. Broil, turning and basting occasionally with marinade, until meat and vegetables are well browned but meat is still pink in center, 10 to 15 minutes total.
