King Ranch Casserole is a Tex-Mex casserole that is typically made with chicken, tomatoes, onions, bell peppers, and cheese. It is often served with rice and beans, and is a popular dish in Texas.
Boil chicken, onion, celery
Removechicken from broth and cool, remove bones, chop chicken.
Boil brothdown to 1 1/2 c
Preheat oven to 350 degrees.
Arrange tortillas in pieces in bottom of buttered 8 x 12 in casserolewith tortillas pieces.
Cover tortilla pieces with chicken chunks.
Sprinkle with green peppers.
Cover with Ro-tel tomatoes.
Pour soupmixture over all of it.
Cover with foil
Removefrom oven and remove foil.
Sprinkle with cheese, return to oven, cooktil cheese is bubbly.
Serve hot.
