There is no definitive answer to this question as there are many different ways to make Louisiana roast beef. However, one popular recipe calls for marinating the beef in a mixture of Worcestershire sauce, garlic, and onion before cooking it in a slow cooker with beef broth, red wine, and seasonings.
In a small bowl combine the onions, celery, bell peppers, butterand seasonings, mix well.
Place roast in a large roasing pan, fat side up.
With a largeknife make 6 to 12 deep slits in the meat (to form pockets) downto a depth of about 1/2 inch from the bottom; do not cut all theway through.
Fill the pockets to their depths with the vegetablemixture, reserving about 1 tablespoon of the vegetables to rubover the top of the roast.
Bake uncovered at 300F until a meatthermometer reads about 160F for medium doneness, about 3 hours.
For rarer roast, cook until thermometer reads 140F.
Serve immediatelytopped with some of the pan drippings if you like.
