A Stuffed Rabbit, Armagh Style is a traditional Irish dish that is made with a rabbit that is stuffed with a mixture of bread crumbs, onions, and herbs. The rabbit is then baked in the oven until it is tender.
Wash and dry rabbit.
Chop onions and fry gently in 2 oz of the butter.
Peel apples and chop; add to onions and fry until soft.
Mix onions, appleand butter with all other stuffing ingredients, and brown quickly inremaining butter.
Place rabbit in a casserole, stuff, surround with excessstuffing, add well-seasoned stock, and cook for 1 3/4 hours, or untiltender, at 350F.
