Swiss Steak Recipe

Swiss steak is a dish made with beef that is first browned and then cooked in a tomato-based sauce. The steak is usually served with potatoes or rice.

 ¼ c all-purpose flour
 2 tb vegetable oil
 1 ts salt
 1 cn (8 oz) tomatoes
 ½ ts pepper or to taste
 ½ c minced onions
 2 lb beef round steak, 1 thick
 ¼ c minced green pepper

Stir together flour, 1/2 tea.

salt, and 1/4 tea.

Sprinkle oneside of meat with half the flour mixture; pound in.

Turn meat and poundin remaining flour mixture.

Cut meat into 6 servings.

Melt shortening inlarge skillet; brown meat over medium heat, about 15 minutes.

Covertightly; simmer 1 hour.

Add small amount of water if necessary.

Mixremaining ingredients; pour over meat.

Cover and simmer for 30 minutes oruntil tender.
